The gelatin molecule can be charged in multiple ways. The applied manufacturing process determines the ISO-electrical point (IEP), i.e. the pH at which the gelatin solution is neutral. Applying gelatin to sensitive products it is crucial to know that the some hazyness and loss of stability may be the consequence if IEP and pH are situated on identical levels. The IEP of the gelatin – used in combination with other hydrocolloids – is strongly influencing the final products gel texture.
