Your production needs to determine whether a high- or low-viscous gelatin is the right type. This quality parameter very much depends on how the gelatin is to be used and what production processes will apply.
Viscosity is measured as the ease of flow of liquid gelatin dissolved under defined temperature conditions in mPas. Viscosity changes exponentially relative to the gelatin concentration.
